Bimi’s Canteen & Bar

A farmer, a Michelin-starred chef, and a fireman walk into a bar. There’s no punchline; this was part of an actual scene during the opening week at Chatham’s new dining hot spot, Bimi’s Canteen and Bar. And it’s the exact type of community commingling the owners were hoping for when they opened in early June.

“We’re a Hudson Valley restaurant,” says Ellen Waggett, who runs Bimi’s with her husband Christopher Landy. “By that I mean we serve food with locally sourced ingredients, as much as possible, to the eclectic community we’re in—from first responders, to business owners, to local celebrities.”

Springhill History

The original land comprising Springhill Farm was deeded sometime around 1750, with the property divided into smaller plots and the barn constructed sometime later. Springhill’s original Dutch farmhouse remains onsite, believed to date back to 1760.

In the 1920s musicians Alexander Bloch and his wife Blanche stopped at the property for a picnic on their way back to New York City. After falling in love with the location, they drove to nearby Austerlitz and purchased it for just $2000. The Blochs turned Springhill into a summer home and music school - the Bloch School of Music ran from the early 1920s through the 1940s. Small cabins for camper accommodation dotted the property adjacent to its creek, and concerts took place in Springhill’s central barn. 

In January 2017, current owner Mark Holthusen began the process of cleaning up Springhill after years of neglect since the school’s closing. He focused on creating a space to work and live. This began with renovating the apartment under the barn, while starting the slow process of reconstruction and demolition. Ground broke on The Longhouse in 2019 which was completed in 2020. The last remaining dwelling to be renovated is the 1700’s era Dutch farmhouse.   

Today Springhill is an event space and vacation rental surrounded by beautiful fields, forests, streams and ponds, deep in the heart of scenic Hillsdale, NY.
